Wine Growing & Making
4 Day Course in the South of France
This 3 day course is based in the Languedoc region of Southern France amongst the vineyards of the Minervois, Cabardès, Corbières, Limoux and Malepère. Delegates will spend time with wine makers in their vineyards and wineries learning how each of them makes their wines.
During the 4 days we will learn the following:
Viticulture
How vines are grown
Soil types and their effects on wines
Climate & weather and their effect on vines and wines
Training and pruning
Pests and diseases
Vinification
Harvesting
Sorting
Adjustments
Fermentation
Racking
Fining & filtering
Maturation and finishing
Organic and Biodynamic grape growing and Wine Making
After learning about these methods we will visit vineyards farmed using these disciplines.
Vineyard Visits
What we learn in the lecture room will be reinforced by visiting various vineyards each day including Clos du Gravillas in St Jean du Minervois, Domaine Olleiux-Romanis in the Corbières and Domaine Gayda in the Malepère.
Languedoc Appellations & Vin de Pays d’Oc
Each day Wendy Gedney AIWS will lead you through various Languedoc-Roussillon appellations and over the 3 days you will have tasted at least one wine from all of the regions.
Master of Wine Tasting
Matthew Stubbs MW will provide a 2 hour "South of France" tasting which includes a tutored tasting of 8 wines from around the Languedoc-Roussillon looking at different styles, grape varieties and the people and locations behind each wine.
Accommodation
You will stay in B & B accommodation in a village in the Minervois
set amongst the vines. Lunch and dinner is included during the first 3
days, on the the final day the afternoon is free for you to explore
Carcassonne and enjoy the cafes and restaurants of your choice.
Course Dates
This course is available on September 4th, 5th and 6th returning on the evening of the 7th. After lunch on the 7th the afternoon is free for you to explore Carcassonne.
Flights
The course dates are based upon Ryanair flights coming into Carcassonne from East Midlands airport which arrive at 10.25 on a Friday morning and return on Monday evening. Flights are also available from Stansted and Liverpool. The cost of the flights is not included in the price of the course.

Course Price
