Key Facts - Sherry

Production Neutral dry white base wine that is fortified (grape spirit added) and aged in a Solera that mixes old wine with younger ones. Most of the flavour comes from this ageing process
Styles Fino, Manzanilla: pale colour; yeasty aromas (no oxidation), medium bodied and dry. Flor yeast protects the wine from oxidation during ageing
  Amontillado: amber colour; nutty oxidative aromas; dry or medium depending on whether the wine has been sweetened before bottling. Between a Fino and an Oloroso in style
  Oloroso: brown colour; meaty nutty oxidative aromas; full bodied and dry, medium or sweet depending on how much they have been sweetened before bottling
  Cream Sherry: combines flavours from a blend of Oloroso, Amontillado and (sometimes) Fino Sherries and are sweetened
  Pale Cream: a sweetened Fino. The sweetening agent can add fruity and dried fruit flavours
