Tank Method Ferment and bottle under pressure
Quicker and therefore cheaper; preserves fruitiness well but coarser bubbles that dissipate quickly
Bottle Fermentation (including traditional/Champagne method) Base wine – second fermentation – yeast autolysis – disgorgement.
Slower and more labour-intensive and therefore more expensive but creates toasty, biscuity complexity through yeast autolysis.
