Aroma and Flavour Characteristics
1. Select as many as possible form the following list of aroma and flavour characteristics. Smell and/or taste them (if edible!) and make a few notes on your impressions:

Next time you taste a wine, see if you can identify any of these flavours or aromas.
2. Collect the following items of food:
- Something bitter: e.g. a gooseberry
- Something sweet: e.g. honey, syrup, cane sugar
- Something acidic: e.g. lemon or lime
- Something tannic: e.g. black tea
- Something salty: e.g. olives
Using the diagram below, see if you can identify how each area of your mouth or tongue reacts and where you can taste each flavour.
